Paleo Scalloped Sweet Potatoes




This was a last minute idea, but it was a fabulous one!

Here is what you'll need:
2 large sweet potatoes, halved, then thinly sliced
2 TBSP Coconut Oil
2 TBSP Ghee or other fat
Sea Salt- to your liking
1 Tea Cinnamon

Put the oil/fat into the pan over medium heat, throw the potatoes, salt and cinnamon in and cover. Remove the lid every 3ish minutes and stir the potatoes, so that every little potato gets a chance to "fry" in the oil. Potatoes will be done after about 15-20 minutes.
