Chili Stuffed Baked Sweet Potatoes


First off, bake some sweet potatoes for a long time. I do mine at 375 for about an hour.

Next, gather these ingredients

1 lb ground meat of your choice. I used beef.
1 white onion (chopped)
1 red bell pepper (chopped)
1 cup-ish cherry tomatoes (chopped)
1 8oz can tomato paste
.5 c salsa (any kind will do)
1 c water
2 TBSP cumin divided
2 TBSP oregano divided
1 TBSP salt
1 TBSP black pepper
1.5 TBSP chili powder
1 Tea cayenne pepper
1 TBSP olive oil

In a large pot, add the olive oil and the onion, toss to coat. Then add in the ground meat and 1 TBSP of cumin, 1 TBSP of oregano, 1 TBSP salt, 1 TBSP black pepper, 1 TBSP of chili powder, and 1 tea cayenne. Blend the meat and spices and onion so that everything is covered. Once the meat is browned, add in ALL other ingredients, stir and simmer for 1 hour.

Once the chili is ready, cut your sweet potato down the middle and remove the skin, pour the chili over the potato and top with whatever you would like: cheese, onion, sour cream! Yum Yum!
