Paleo Pumpkin Chili
Such a great warm treat for cold weather!
Here is what you'll need:
1-2 lbs. Ground beef or turkey
1 onion, diced
1-2 bell peppers, diced (any color)
14oz can of canned pumpkin
1 tsp pepper
1 tsp cinnamon
1 tsp nutmeg
1 tsp cumin
1 jar salsa, or 1 14 oz can of tomatoes
1 box of Tomato and Roasted Red Pepper Soup
Start by browning the meat in a large pot, as the meat starts to cook, add in all the veggies and saute for about 5 more minutes. Next, add all the spices, the canned pumpkin and tomatoes/salsa, and soup. Turn the burner to a low/medium and let simmer for an hour to and hour and a half, stirring every 20ish minutes.
This recipe is so easy. I love to make it because I can clean, play with Ellie, watch TV and it cooks on it's own.
*** Also, I have added different veggies to this recipe when I needed to either get rid of them, or I was out of the bell peppers. I have used zuchinni, sweet potatoes and carrots just to make the chili chunkier, it's all tasty, just toss it in!!!

Paleo Egg Muffins
I have been trying out new breakfast grab and go ideas since I will be heading back to work on Monday. Sad!
Here is what you'll need:
1 tube pork breakfast sausage
1 dozen eggs
Veggies of your choice (I used some leftover broccoli)
Ghee, Bacon Fat or Cooking Spray
Preheat your oven to 350. Crumble and brown the sausage in a pan. Grease or spray a muffin tin with your fat of choice. I used Coconut Oil and I don't think it was very useful, cause a lot of the muffins stuck to the pan. I think Cooking Spray would work best. Next scramble your eggs and mix in whatever veggies you like. I would probably pre-cook most veggies, that's just my preference though. Distribute the sausage evenly at the bottom of each muffin circle of the tin, then pour your egg and veggie mixture over so that it's almost to the top of the pan. Cook for 20-30 minutes, depending on your oven.
Paul ate 9 of the 12 muffins in about 5 minutes. I guess he liked them!

Paleo Blueberry Muffin Bread
Here is what you'll need:
2 cups Almond Flour
1/2 cup Coconut Flour
4 eggs
1 TBSP Vanilla
1/2 Tea Baking Soda
1/2 Tea Salt
1/3 cup sweetner of your choice (honey/maple syrup/agave)
2 cups blueberries
Preheat your oven to 300 degrees. Mix all the ingredients together, adding the blueberries as the last thing you add. Grease a bread pan with coconut oil or cooking spray. Place the batter in the pan and bake for 40 minutes.
I was skeptical because the batter appeared very dry, but it came out rather moist after cooking and was pretty delicious.

Paleo Scalloped Sweet Potatoes
This was a last minute idea, but it was a fabulous one!
Here is what you'll need:
2 large sweet potatoes, halved, then thinly sliced
2 TBSP Coconut Oil
2 TBSP Ghee or other fat
Sea Salt- to your liking
1 Tea Cinnamon
Put the oil/fat into the pan over medium heat, throw the potatoes, salt and cinnamon in and cover. Remove the lid every 3ish minutes and stir the potatoes, so that every little potato gets a chance to "fry" in the oil. Potatoes will be done after about 15-20 minutes.

Cinnabark (Paleo Candy)
Obvi this is not the real picture, but many have related the taste to cinnamon rolls!
I made this the other night at our Ruination Crossfit Potluck, and it took 1st place!
Here is what you'll need:
1 c maple syrup
1 c coconut oil
1 c coconut butter
½ c almond butter
1 c raw honey
½ c pecans
½ c cashews
2 teas Vanilla extract
3 TBSP Cinnamon
1 teas salt
In a pot, sauté the nuts in about 2-3 tbsp of coconut oil, careful not to burn them. Next, add in the honey and maple syrup, stirring consistently. Be sure to keep the heat at a medium-low, as to not burn these ingredients. Once it begins to thicken a bit, add in the rest of the coconut oil, the coconut butter and almond butter and continue to stir, blending it all together. Lastly, add your cinnamon, salt and vanilla and mix it all together. Turn your burner to low and let it simmer for 3-5 minutes while you prep the pan. Get a large (9”x13”) cake pan and line it with parchment paper. Take the batter off of the heat and pour it evenly into the pan. Place the goodness in the freezer for at least an hour. When ready to serve, cut it or break it up with a knife. Whatever you are not going to eat, keep in the freezer as it does soften a bit at room temperature.
• Next time I would use more nuts, I don’t feel like there were enough.
• I may also use more almond butter
• Another yummy add-in idea would be coconut shavings.

Paleo Pulled Pork with Bacon Sweet Potato Hash
We couldn't take a picture to make this meal look as good as it tastes, so we thought this pic would do. Paul is really enjoying it! This was a nice savoury meal for a cold night, and very tasty!
Here is what you'll need:
Costco pre-cooked Smoked Pulled Pork (So easy!!!)
Follow this recipe for the BBQ Sauce
For the Hash:
1 large sweet potato, chopped
6-8 bacon slices, chopped
2 onions, chopped
2 TBSP Organic butter or ghee
1 Teasp garlic powder
salt & pepper
In a large saucepan, add the bacon. When the bacon starts to cook and grease appears in the pan, add the rest of the ingredients. Saute the bacony buttery goodness for 10-15 minutes, stirring often.
It's your choice if you'd like to place the pork on top of the hash, or just side by side. I liked tasting it together in one bite, it was sooooo good!

Recipe Shout Out
While I haven't been very creative myself lately, I have tried some rather delicious recipes from other paleo blogs that I follow.
I highly recommend the Paleo Orange Chicken from Health Bent. This was a nice different meal, and overall, the prep and cook time took me only about 30 minutes which I am finding is a huge reason why or why not I am inclined to make certain meals. Lately I need quick and easy meals, and this was just that, and it was also very delicious.
Next, I recommend the Mushroom Gravy Pot Roast from PaleOMG. This was a nice savoury meal that I poured over some garlic mashed cauliflower. It really hit the spot because it was a cold night, and who doesn't love crockpot meals? They are so easy!!!
